Deep fried Avocado Goodness! Serves 4

  • 3 ripe avocados, peeled, and sliced into 1″ pieces
  • 1/4 cup finely chopped cilantro
  • 1/4 cup finely chopped red onion (add red pepper if desired)
  • 1 teaspoon sea salt
  • 1 packet of egg roll papers (found in refrigerated section at grocery store).
  • deep fryer with vegetable oil (or large frying pan with 1 1/2 cups veggie oil.

 

  1. Combine avocado, salt, onion, and cilantro in bowl and stir.
  2. Position egg roll squares, so one point is facing you.  See Egg roll instructions for more info.
  3. Spoon large table spoon helping of avocado mixture onto center of square.
  4. Fold all edges tightly.
  5. Deep fry or pan fry until crispy and golden!
  6. Easy Dip suggestion: Equal parts  soy sauce +  honey plus chili sauce.
