Deep fried Avocado Goodness! Serves 4
- 3 ripe avocados, peeled, and sliced into 1″ pieces
- 1/4 cup finely chopped cilantro
- 1/4 cup finely chopped red onion (add red pepper if desired)
- 1 teaspoon sea salt
- 1 packet of egg roll papers (found in refrigerated section at grocery store).
- deep fryer with vegetable oil (or large frying pan with 1 1/2 cups veggie oil.
- Combine avocado, salt, onion, and cilantro in bowl and stir.
- Position egg roll squares, so one point is facing you. See Egg roll instructions for more info.
- Spoon large table spoon helping of avocado mixture onto center of square.
- Fold all edges tightly.
- Deep fry or pan fry until crispy and golden!
- Easy Dip suggestion: Equal parts soy sauce + honey plus chili sauce.
