Breakfast Quesadilla

Feel like spicing things up a bit  for breakfast? Here’s a quick and simple recipe that’s sure to hit the breakfast pinata!

  • 2 precooked slices of bacon (or turkey bacon)
  • 1 egg scrambled (or 1/2 cup egg whites)
  • 1/4 cup if cheddar cheese (or jack)
  • 1 flour tortilla (or two small corn tortillas)
  • fresh salsa/favorite hot sauce
  • sour cream (optional)


  1. Throw precooked bacon in a pan over medium heat and allow to crisp up a little.
  2. add pre-scrambled egg or egg whites and stir until preferred texture.
  3. Sprinkle the cheese on top and cover pan for about 30 seconds or until cheese is melted.
  4. Microwave or toast tortilla.
  5. Place the heated tortilla on plate and spread cheesy egg mixture on top.
  6. Fold tortilla in half  and add desired salsa/sauce/sour cream.
