Healthy side dish to accompany grilled fish or tacos! Recipe serves 2, but can be doubled, tripled, etc.
- 1 cup white rice (2 cups cooked)
- 1 ripe lime
- 1/2 cup chopped cilantro
- 1 tsp. of salt
- 1 tbsp. vegetable oil (optional)
- Prepare rice according to instructions. (do not overcook!)
- Add chopped cilantro, lime juice, and salt.
- Stir, garnish with cilantro or limes, and serve!
