Cilantro Lime Rice

Healthy side dish to accompany grilled fish or tacos! Recipe serves 2, but can be doubled, tripled, etc.

  • 1 cup white rice (2 cups cooked)
  • 1 ripe lime
  • 1/2 cup chopped cilantro
  • 1 tsp. of salt
  • 1 tbsp. vegetable oil (optional)

 

  1. Prepare rice according to instructions. (do not overcook!)
  2. Add chopped cilantro, lime juice, and salt.
  3. Stir, garnish with cilantro or limes, and serve!
