Prepare rice in advance to cut down on prep time and allow rice to cool. Feel free to add other ingredients, this is just a base. Serves 4 +.
- 4 cups cooked and cooled rice
- 3 tbsp. lite soy sauce
- 3 green onions (cleaned and chopped)
- 2 eggs (cracked and whisked)
- 1 tsp. pepper
- 4 tbsp. vegetable oil
- 1/4 cup shredded carrots
- Heat wok or deep frying pan over med/high heat.
- Add oil to pan.
- Add rice and stir for one minute.
- Pour eggs mixed with pepper, soy sauce, green onion, and carrots over rice.
- Stir frequently until rice has a little crisp to it, and egg is cooked completely.
