Easy Fried Rice

Prepare rice in advance to cut down on prep time and allow rice to cool. Feel free to add other ingredients, this is just a base. Serves 4 +.

  • 4 cups cooked and cooled rice
  • 3 tbsp. lite soy sauce
  • 3 green onions (cleaned and chopped)
  • 2 eggs (cracked and whisked)
  • 1 tsp. pepper
  • 4 tbsp. vegetable oil
  • 1/4 cup shredded carrots

 

  1. Heat wok or deep frying pan over med/high heat.
  2. Add oil to pan.
  3. Add rice and stir for one minute.
  4. Pour eggs mixed with pepper, soy sauce, green onion, and carrots over rice.
  5. Stir frequently until rice has a little crisp to it, and egg is cooked completely.
