Gnocchi with Tomatoes and Arugula

This traditional Italian dish is full of fresh flavors and is perfect for a quick dinner or side. Serves 4-6.

  • 1 lb. cherry tomatoes, sliced in quarters
  • 1 lb. gnocchi, cooked according to packaging
  • 1 cup arugula, chopped
  • 1/2 cup shredded parmesan
  • 1/4 cup olive oil
  • 3 tbsp. basil, chopped
  • 1 tsp. reduced balsamicĀ vinaigrette
  • 1 tsp. sea salt
  • 1-2 garlic cloves, minced

 

  1. Mix all ingredients in large bowl and allow flavors to meld for 30-45 minutes before serving.
  2. Garnish with a bit of fresh basil.
