Greek Salad with Spinach

This is our go-to salad when we’re feeling like something light and healthy. The salad is pretty basic…spinach, red onion, juicy tomatoes, and crisp cucumbers. The dressing speaks for it’s self. This salad, topped with feta and served with hummus and pita is a perfect “Meatless Monday” meal. Serves 4.

Salad Ingredients:

  • 1 bag of spinach
  • 1/4 red onion, thinly chopped
  • 1 medium-large tomato, diced
  • 1/2 of a cucumber, sliced
  • 1/4 feta cheese crumbles

Dressing Ingredients:

  • 2 fresh lemons, juiced
  • 1 clove garlic, minced
  • 1/4 cup extra virgin olive oil (the good stuff)
  • 1 tbsp. water
  • sea salt and pepper

 

  1. Gather salad ingredients (sans feta) in a large mixing bowl.
  2. Toss and plate.
  3. Shake and drizzle dressing on top of plated salad.
  4. Top with feta crumbles, sea salt and pepper.

*Tip*Make dressing in advance to allow flavors to meld. Add Kalamata Olives if you wish!
