- 1 bag of spinach
- 1/4 red onion, thinly chopped
- 1 medium-large tomato, diced
- 1/2 of a cucumber, sliced
- 1/4 feta cheese crumbles
- 2 fresh lemons, juiced
- 1 clove garlic, minced
- 1/4 cup extra virgin olive oil (the good stuff)
- 1 tbsp. water
- sea salt and pepper
- Gather salad ingredients (sans feta) in a large mixing bowl.
- Toss and plate.
- Shake and drizzle dressing on top of plated salad.
- Top with feta crumbles, sea salt and pepper.
*Tip*Make dressing in advance to allow flavors to meld. Add Kalamata Olives if you wish!
