Rosemary Rotisserie Chicken Soup

Healthy soup for the soul! 6 servings.

  • 1 cooked rotisserie chicken from local market
  • 2 sprigs of fresh rosemary finely chopped
  • 3 celery stalks chopped
  • 1 potato diced into small cubes
  • 1 medium red pepper chopped
  • 1 small red onion chopped
  • 3 cloves garlic minced
  • 3 cans chicken broth (low sodium for lighter broth)
  • 1 cup pasta of your choice (use what you have)
  • 1 tbsp olive oil
  • sea salt & pepper


  1. In a large skillet, add oil, s+ p, onion, potato, red pepper and garlic. Saute over medium heat for five minutes, stirring occasionally.
  2. Shred chicken meat to desired size and add to pan. Heat for 2 minutes.
  3. Add chicken broth and rosemary to pan and reduce heat to low.  Allow to simmer for approx. 20 minutes.
  4. Final step, add pasta and heat for additional 5 minutes or until noodles are soft enough.
