scalloped corn casserole

A great Southern side so easy to prepare! Serves 6.

  • 2 eggs, beaten
  • 15oz. can creamed corn
  • 4 oz. Mexican mix cheese, shredded
  • 2/3 cup milk
  • 12 saltine crackers, coarsely crushed
  • 3 tbsp. diced green chile peppers
  • 1 tsp. sugar
  • salt and pepper to taste

 

  1. Preheat oven to 350°F.
  2. Stir all ingredients in a large bowl.
  3. Transfer to shallow baking dish. Bake uncovered for 35 minutes or until center is done.
