Shepherd's Pie

Shepherd’s Pie is super easy to make, especially if you have leftover mashed potatoes! You’ll want to use a 2 quart casserole or Pyrex dish. Serves 4.

  • 2 1/2 cups mashed potatoes
  • 1 medium white or red onion, chopped
  • 2 tbsp oil (veggie or olive)
  • salt and pepper
  • 2 cups frozen pea and carrot mixture
  • 2 tbsp. dried herbs ┬ácombo(oregano, thyme, rosemary-use what you have)
  • 1 1/2 lb. lean ground beef or turkey
  • 1 can beef broth
  • 1/2 cup ketchup
  • 3 tbsp. flour
  • 1/4 cup green onions, chopped
  • 1/4 shredded cheese (your choice)
  1. Preheat oven to 425┬░ F.
  2. Brown meat in large pan on stove over medium/high.
  3. Add oil, onions, carrots/peas, herb combo, tsp. salt, tsp. pepper to meat. Stir well and continue to cook for a few minutes.
  4. Mix broth, flour, and ketchup, and then add to meat in pan. Cook until sauce reduces a little (3-4 minutes)
  5. In casserole dish, spread meat and veggie mixture along bottom.
  6. Layer potatoes on top.
  7. Sprinkle with cheese.
  8. Top with green onions and bake for 15-20 minutes.
