Shepherd’s Pie is super easy to make, especially if you have leftover mashed potatoes! You’ll want to use a 2 quart casserole or Pyrex dish. Serves 4.
- 2 1/2 cups mashed potatoes
- 1 medium white or red onion, chopped
- 2 tbsp oil (veggie or olive)
- salt and pepper
- 2 cups frozen pea and carrot mixture
- 2 tbsp. dried herbs combo(oregano, thyme, rosemary-use what you have)
- 1 1/2 lb. lean ground beef or turkey
- 1 can beef broth
- 1/2 cup ketchup
- 3 tbsp. flour
- 1/4 cup green onions, chopped
- 1/4 shredded cheese (your choice)
- Preheat oven to 425° F.
- Brown meat in large pan on stove over medium/high.
- Add oil, onions, carrots/peas, herb combo, tsp. salt, tsp. pepper to meat. Stir well and continue to cook for a few minutes.
- Mix broth, flour, and ketchup, and then add to meat in pan. Cook until sauce reduces a little (3-4 minutes)
- In casserole dish, spread meat and veggie mixture along bottom.
- Layer potatoes on top.
- Sprinkle with cheese.
- Top with green onions and bake for 15-20 minutes.
