Warm Almond Rice with Field Greens and Vinaigrette

What a great Meatless Monday Recipe! This hearty salad is delicious and light, yet satisfying. Use what you have recipe! Serves up to 4 people.

  • 1 bag of mixed greens
  • 2 cups of easy microwavable white  rice (or brown rice)
  • 1/2 cup of your favorite vinaigrette (for lighter vinaigrette, add a couple of tablespoons of water to dressing)
  • 1/4  cup  slivered/ chopped almonds
  • 1/4 cup  sun dried tomatoes (or roasted red peppers)
  • 1/3 cup feta cheese (or goat cheese)
  • 1/2 cup sliced cucumber (onion or other sliced veggie)


  1. Combine all ingredients in large salad bowl
  2. Serve immediately!
