Old Thyme Potatoes

This is such a simple recipe that goes well with so many dishes! Serves 4.

 

  • 1 1/2 lbs small red potatoes, cut in half
  • 2 tsp. thyme
  • 1 tsp. black pepper
  • 1 tsp. sea salt
  • 1/4 cup oil

 

  1. Par cook the potatoes in a pot of boiling water for 10 minutes.
  2. Remove potatoes from water, drain, and pat dry.
  3. Heat oil in pan over medium high heat.
  4. Once the oil has risen in temperature, add potatoes and begin sprinkling with spices and salt.
  5. Once the potatoes are crispy, remove and place on a plate with several paper towels to remove excess oil.
