Tortellini & Spinach Tomato Soup

Soups are so fun and satisfying to make when they’re easy to prepare and ingredients aren’t hard to come by! Serves 4.

  • 1 package fresh tortellini
  • 1 14oz. can whole tomatoes, chopped
  • 10 oz. fresh spinach, stems removed
  • 1 tbsp. olive oil
  • 5 cups chicken broth
  • 1 garlic clove, minced
  • 1/2 cup onion, finely chopped
  • salt and pepper to taste
  • Parmesan to top


  1. In a large pot, heat the olive oil over medium heat.
  2. Saute the garlic and onion for about 5 minutes, stirring frequently.
  3. Add broth and tomatoes, raise heat to high, and boil.
  4. Add the tortellini and cook, timed according to tortellini packaging.
  5. Add the spinach, salt and pepper about 1 1/2 minutes before tortellini is done.
  6. Serve hot and sprinkle with Parmesan.
