Do you have a couple of leftover chicken breasts? This is a great way to flip those leftovers and put together a simple taco recipe. Serves 2.
- 2 chicken breasts shredded or chopped
- 1 tbsp. chili powder
- salt and pepper to taste
- 1/2 cup shredded cheddar jack cheese
- 1 cup chopped lettuce
- 1/4 cup salsa or favorite taco sauce
- tbsp. oil
- Heat oil in pan over med high and add chicken.
- Sprinkle chili powder on top and mix in.
- If the chicken was raw, cook through. If the chicken was precooked, simply cook until heated and even a little crisp on the edges.
- Heat the taco shells in the oven, according to package instructions.
- Remove from oven and add cheese to the bottom, top with hot chicken, lettuce and then drizzle with salsa!
