Chicken Tacos

Do you have a couple of leftover chicken breasts? This is a great way to flip those leftovers and put together a simple taco recipe. Serves 2.

  • 2 chicken breasts shredded or chopped
  • 1 tbsp. chili powder
  • salt and pepper to taste
  • 1/2 cup shredded cheddar jack cheese
  • 1 cup chopped lettuce
  • 1/4 cup salsa or favorite taco sauce
  • tbsp. oil
  1. Heat oil in pan over med high and add chicken.
  2. Sprinkle chili powder on top and mix in.
  3. If the chicken was raw, cook through. If the chicken was precooked, simply cook until heated and even a little crisp on the edges.
  4. Heat the taco shells in the oven, according to package instructions.
  5. Remove from oven and add cheese to the bottom, top with hot chicken, lettuce and then drizzle with salsa!
