Broccoli Salad

Hearty Italian style salad low fat, low cal, just plain healthy! Serves 6!

  • 2 bunches of broccoli
  • 2 cups shredded carrots
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp. chili powder
  • 1/2 cup lemon juice
  • sea salt and pepper to taste
  1. Soak chopped broccoli in cold water for 30 minutes.
  2. Par cook the broccoli for 3 minutes in boiling water.
  3. Remove the broccoli and place in cold water bath with carrots.
  4. Drain and place in serving bowl.
  5. Pour lemon juice, salt, pepper, chili powder over the top and stir.
  6. Serve chilled.
