Macaroni Salad (Light)

Macaroni salad is such a great dish to share with your family during the spring and summer months! Use what you have in your fridge to make a unique batch of your own! Serves 4.

  • 2 cups dry elbow macaroni (or any tube/shell pasta)
  • 1-2 tbsp. dijon mustard
  • 1/4 cup italian salad dressing
  • 2 celery stalks, chopped
  • 1 dill pickle or large spear, finely chopped
  • 1/2 cup shredded carrots
  • 1/4 cup red onion, thinly sliced
  • salt and pepper to taste
  1. Prepare pasta according to instructions.
  2. Drain and bring pasta to room temperature.
  3. Add all ingredients to serving dish and stir well.
  4. Chill in fridge for 30 minutes.
  5. Serve and enjoy!
