Authentic Italian thick soup! Serves up to 4 people.
- 3/4 cup olive oil
- 1 leek, peeled, cleaned and chopped (pale green and whites only)
- 5 cloves of garlic, minced
- 5 chopped roma tomatoes
- 1/2 cup fresh basil leaves, chopped
- salt and pepper to taste
- 5 stale or baked dinner rolls, in 1 inch pieces
- 2 cups water or veggie stock
- Saute the chopped leek in olive oil over medium heat.
- Add the tomatoes, basil, and garlic.
- Reduce heat to low. Add water and salt and pepper.
- Bring to boil.
- Add bread, mix and serve.
