Simple Leek and Tomato Soup

Authentic Italian thick soup! Serves up to 4 people.

  • 3/4 cup olive oil
  • 1 leek, peeled, cleaned and chopped (pale green and whites only)
  • 5 cloves of garlic, minced
  • 5 chopped roma tomatoes
  • 1/2 cup fresh basil leaves, chopped
  • salt and pepper to taste
  • 5 stale or baked dinner rolls, in 1 inch pieces
  • 2 cups water or veggie stock
  1. Saute the chopped leek in olive oil over medium heat.
  2. Add the tomatoes, basil, and garlic.
  3. Reduce heat to low. Add water and salt and pepper.
  4. Bring to boil.
  5. Add bread, mix and serve.
