Zucchini Torte

Serves up to 6 people.

  • 4 zucchini, sliced
  • 3 tbsp. olive oil
  • 4 eggs, beaten
  • 1/4 cup grated┬áParmesan
  • 2 tbsp. cream
  • salt and pepper to taste
  1. Saute zucchini with oil in frying pan.
  2. Combine eggs, cream, and cheese and mix well.
  3. Once both sides of zucchini is cooked well, pour egg and cheese mixture on top.
  4. Cook until egg has cooked through.
