Serves up to 6 people.
- 4 zucchini, sliced
- 3 tbsp. olive oil
- 4 eggs, beaten
- 1/4 cup grated Parmesan
- 2 tbsp. cream
- salt and pepper to taste
- Saute zucchini with oil in frying pan.
- Combine eggs, cream, and cheese and mix well.
- Once both sides of zucchini is cooked well, pour egg and cheese mixture on top.
- Cook until egg has cooked through.
