Rice Pilaf with Arugula and Feta Cheese

  • 1/4 cup orzo
  • 1 tbsp. olive oil
  • 1 cup long white rice
  • 2 cups chicken or veggie stock
  • 2 cups arugula
  • 1/4 cup feta cheese crumbles


  1. Heat olive oil and orzo in a skillet until you get a nice golden finish to the orzo.
  2. Add the rice and stock and stir.
  3. Bring to a boil, cover and reduce to simmer until the rice is tender.
  4. Add arugula and feta, give it a stir.
  5. Serve!
