Tex Mex Quesadilla

Do you need something quick and easy to whip up for an afternoon snack? Serves 4-6!


  • 1 dozen corn tortillas
  • 1 cup corn (leftovers or canned, whatever)
  • 1 package shredded jack or pepper jack cheese
  • 1 cup sliced veggie of your choice (use what you have, I like peppers)


  1. Heat skillet over medium heat.
  2. Arrange tortillas on surface.
  3. Stuff with cheese and veggies.
  4. Fold in half.
  5. Flip after one minute.
  6. Cook an additional minute. Serve!
* Serve as is or with a side of salsa, guacamole, or sour cream.
