What to do with leftover cilantro! Make this sauce! It is so simple to whip it up and it has under five ingredients! Serves 4. Great as a topping for meat or tofu or as a pasta salad sauce.
- 2 cups cilantro
- 2 tbsp. olive oil or veggie oil
- 1/2 cup peanuts (I used dry roasted, but use what you have)
- Puree ingredients.
*Toss with pasta and chopped celery for a quick pasta salad and serve cold.
*Use as a pesto for topping sauteed chicken or tofu.
