Thai Peanut Puree (Sauce for Chicken, Tofu, or Pasta Salad)

What to do with leftover cilantro! Make this sauce! It is so simple to whip it up and it has under five ingredients! Serves 4.  Great as a topping for meat or tofu or as a pasta salad sauce.

Ingredients:

  • 2 cups cilantro
  • 2 tbsp. olive oil or veggie oil
  • 1/2 cup peanuts (I used dry roasted, but use what you have)

Directions:

  1. Puree ingredients.

*Toss with pasta and chopped celery for a quick pasta salad and serve cold.
*Use as a pesto for topping sauteed chicken or tofu.
