Breakfast on the go, never easier! Try this protein packed breakfast! Serves 2 kids, or 1 adult.
- 2 corn or small flour tortillas
- 2 eggs
- 2 tbsp. salsa
- 2 tbsp. cheese of your choice
- Scramble or fry both eggs (or just the whites for low cal option).
- Top with cheese and allow to melt.
- Place equal portions of egg and cheese combo over warmed tortillas. (Quick trick-heat tortillas in microwave for 20 seconds).
- Top with salsa and roll up!
