Potato Salad [featuring Dill]

Dill plus potatoes plus mayo  and some other stuff equals tasty potato salad!

Ingredients:

  • 4 lb. skinned, cooked red potatoes, cooled
  • 2 tbsp. olive oil
  • 3 tbsp. cider vinegar
  • 1 c. light mayonnaise/Miracle Whip
  • 1 c. plain non-fat Greek yogurt
  • 2 tsp. Dijon mustard
  • 1 1/2 tsp. sea salt
  • 1 1/2 tsp. pepper
  • 1 cup minced red onion
  • 1/3 cup fresh dill, minced
Directions:
  1. Cut potatoes into 1/2 inch pieces.
  2. In a small bowl mix remaining ingredients.
  3. Pour over potatoes.
  4. Mix well.
  5. Chill in the fridge before serving.
