Dill plus potatoes plus mayo and some other stuff equals tasty potato salad!
Ingredients:
- 4 lb. skinned, cooked red potatoes, cooled
- 2 tbsp. olive oil
- 3 tbsp. cider vinegar
- 1 c. light mayonnaise/Miracle Whip
- 1 c. plain non-fat Greek yogurt
- 2 tsp. Dijon mustard
- 1 1/2 tsp. sea salt
- 1 1/2 tsp. pepper
- 1 cup minced red onion
- 1/3 cup fresh dill, minced
Directions:
- Cut potatoes into 1/2 inch pieces.
- In a small bowl mix remaining ingredients.
- Pour over potatoes.
- Mix well.
- Chill in the fridge before serving.
