Chicken Fried Rice - Simple Recipes

Chicken Fried Rice

This chicken fried rice recipe is so simple to make and very enjoyable.

Ingredients:

  • 2 cups cooked rice
  • 1 egg
  • 2 egg whites
  • 3 small green onions, chopped
  • 1 chicken breast , diced
  • 1 crown broccoli, chopped
  • 6 white mushrooms, quartered
  • 2 tbsp. lite soy sauce
  • 2 tbsp. oil

Directions:

  1. Heat oil in large skillet.
  2. Add chicken, salt and pepper.
  3. Cook until chicken is somewhat crispy.
  4. Add onion, broccoli, and mushrooms.
  5. Heat for a few minutes.
  6. In a mixing bowl, whip eggs with a fork until whites and yolk are blended.
  7. Add rice to skillet with veggies. Give it a good stir.
  8. Pour egg mixture over skillet and fold in.
  9. Pour soy sauce over the skillet evenly.
