Cinnamon Coffee Cake

Ingredients:
Batter

  • 3/4 cup butter, softened
  • 1 1/2 cups sugar
  • 3 eggs
  • 2 tsp. vanilla extract
  • 3 cups all purpose flour
  • 2 tsp. baking powder
  • 2 tsp. baking soda
  • 1/2 ┬átsp. salt
  • 1 1/2 cups lite sour cream

Filling

  • 1/2 cup brown sugar
  • 1/2 cup finely chopped walnuts
  • 2 tsp. cinnamon

Directions:

  1. Preheat oven to 350F.
  2. Grease 9×13 pan.
  3. In large mixing bowl, combine butter, sugar, eggs, and vanilla.
  4. Beat on medium speed for 2 minutes.
  5. Mix in flour, baking powder, baking soda, salt and sour cream.
  6. Spread 1/3 of batter (approx. 2 cups) in pan and sprinkle with 1/3 of filling (about 6 tbsp.). Repeat twice more.
  7. Bake 60 minutes or until wooden toothpick inserted in center comes out clean.
