Citrus Chicken Burritos

Makes 4 jam packed burritos.


  • 2 chicken breasts, boneless, skinless, cut into cubes
  • 2 limes, juiced
  • 1 lemon, juiced
  • 1 tsp. salt
  • 1/4 tsp. cayenne pepper
  • 1 clove garlic, pressed
  • 4 flour tortillas
  • 1 cup jack cheese, shredded
  • 4 tbsp. fresh salsa
  • 4 tbsp. sour cream
  • 1 tbsp. canola oil
  • 1 can black beans strained.
  1. Marinate the chopped chicken in the citrus juice and garlic for two hours or overnight.
  2. Saute the chicken in oil over medium until cooked through.
  3. Preheat the oven.
  4. Mix beans cheese onions, chicken and salsa in a bowl.
  5. Preheat the oven to 400F.
  6. Spread the mixture down the center of the tortilla from top to bottom.
  7. Fold in the top and bottom edge (touching the beans)
  8. Roll in the sides tightly.
  9. Bake with the folded side down for 15 minutes.
  10. Serve on a bed of chopped iceberg lettuce with sour cream or guacamole dipping sauce!
