corn chowder

Serves 4!

Ingredients:

  • 1/2 cup diced bacon
  • 4 medium red potatoes, chopped
  • 1/2 cup white onion, chopped
  • 2 cups water
  • 3 cups cups cream-style corn, 2 (12 oz.) cans or 1 lb.
  • 2 tsp. sea salt
  • 1/2 tsp. pepper
  • 1 tbsp. chili powder
  • 2 cups half-and-half or light cream

Directions:

  1. Sauté bacon until browned and crisp.
  2. Add chopped potatoes and onions.
  3. Add water, corn, and seasonings.
  4. Cover and simmer for 15 to 20 minutes.
  5. Stir in cream; heat through but do not boil.
