Lemon Chicken with Wild Rice and Artichoke Hearts

Easy Dutch Oven (complete) Dinner recipe.

Ingredients:

  • 1 lb. raw chicken strips (white meat)
  • 2 cups instant rice
  • 1 can of chicken broth (low sodium/14 oz.)
  • 1/4 cup shredded parmesan cheese
  • olive oil cooking spray
  • 1/3 cup lemon juice
  • 1 tsp. sea salt
  • 1 tsp. freshly cracked black pepper
  • 1 medium red onion, chopped
  • 1 medium red pepper, diced
Directions:
  1. Preheat the Dutch Oven over medium high heat.
  2. Spray it with cooking spray and add chicken, onion, and red pepper.
  3. Sauté for 5 minutes.
  4. Stir in instant rice, broth, lemon juice, s&p.
  5. Bring to a boil.
  6. Cover and reduce heat to low.
  7. Continue cooking for 20 minutes.
  8. Add artichokes and stir.
  9. Add cheese over the top.
  10. Serve!
