Spinach Feta Pasta

Here’s a quick and simple recipe for tonight’s dinner that will cost under $5! Serves 4.

 

Ingredients:

  • 1 block of frozen spinach
  • 1/2 cup feta cheese crumbles
  • 3 cups dry pasta (I used rotini)
  • 2 tbsp. olive oil

 

Directions:

  1. Microwave the spinach in a glass bowl for 2 minutes.
  2. Boil the water for pasta.
  3. Toss in the pasta.
  4. Bring to boil/al dente.
  5. Drain.
  6. Break apart the spinach and heat for an additional 1-2 minutes until fully cooked.
  7. Toss with spinach and olive oil.
  8. Add cheese, mix, and serve.
