Vegetarian split pea soup recipe. It’s so simple, you can’t mess this recipe up!

Ingredients: 

  • 8 ounces dry yellow split peas, rinsed
  • 2 3/4 cups water
  •  1 cup diced firm tofu
  • 1 chopped onion
  •  1 chopped carrot
  •  1 bay leaf
  •  2 tsp. dried parsley flakes
  •  1/2 tsp. dried basil
Directions:
  1. Combine all ingredients in a medium pot.
  2. Cook on low over medium heat for 45 minutes to 1 hour.
  3. Serve and enjoy!
  4. Salt and Pepper to taste.
