Recipe type: Sauce
- 3 egg yolks
- 1 lemon, squeezed
- 1 dash of cayenne pepper
- 1 tbsp. water
- ½ tsp. sugar
- 1 stick unsalted butter
- ¼ tsp. sea salt
- Place the water, egg yolks and butter in a suace pan over low heat.
- Stir constantly and add the lemon juice, salt, sugar and cayenne.
- Sauce will thicken and settle even after it is removed from heat.
