canned minestrone can be such a turn off, but this batch is packed full of fresh veggies and al dente pasta!
Minestrone Soup
Ingredients
- 1 cup chopped cabbage
- 1 celery stalk, thinly sliced
- 1 onion, chopped
- 1 garlic clove, pressed
- 2 tsp. olive oil
- 3 cups water
- 1 can Italian stewed or diced tomatoes, undrained
- 2 cubes bouillon of your choice
- 1 package frozen spinach
- 1cup pasta of your choice
- 1 tsp. pepper
- 1 cup chopped baby carrots
Instructions
- Prepare pasta according to packaging instructions.
- Drain and set aside.
- Saute garlic and onion for a few minutes over medium heat.
- Add liquids and bring to a boil.
- Toss in the remaining ingredients. Return to a boil.
- Cover and reduce to a simmer for 30 minutes.
- Top with a bit of freshly grated Parmesan, optional.
