canned minestrone can be such a turn off, but this batch is packed full of fresh veggies and al  dente pasta!

Minestrone Soup
 
Ingredients
  • 1 cup chopped cabbage
  • 1 celery stalk, thinly sliced
  • 1 onion, chopped
  • 1 garlic clove, pressed
  • 2 tsp. olive oil
  • 3 cups water
  • 1 can Italian stewed or diced tomatoes, undrained
  • 2 cubes bouillon of your choice
  • 1 package frozen spinach
  • 1cup pasta of your choice
  • 1 tsp. pepper
  • 1 cup chopped baby carrots
Instructions
  1. Prepare pasta according to packaging instructions.
  2. Drain and set aside.
  3. Saute garlic and onion for a few minutes over medium heat.
  4. Add liquids and bring to a boil.
  5. Toss in the remaining ingredients. Return to a boil.
  6. Cover and reduce to a simmer for 30 minutes.
  7. Top with a bit of freshly grated Parmesan, optional.
