Fun, festive and finger licking good pumpkin fritters.

  • 1½ cups shredded pumpkin
  • 2 cups buttermilk
  • 3 eggs, whisked
  • 1 tsp. salt
  • 1½ cups flour
  • 2 tsp. baking powder
  • oil for frying
  • confectioners’ sugar for garnish

  1. Whisk together the eggs, milk, pumpkin, salt, flour and baking powder.
  2. Preheat the oil for frying to approx. 350F.
  3. Drop heaping spoonfuls of batter into the oil.
  4. If you aren’t using a deep fryer, be sure to fry all sides evenly.
  5. Should take under 5 minutes.
  6. Remove from oil and set aside on paper towels to remove excess oil.
  7. Plate and sprinkle with confectioners’ sugar and serve while still warm.

Serve with a bit of whipped cream for added sweetness!
