Sweet and fluffy squash muffins scrumptious cinnamon-sugary topping.

Spiced Winter Squash Muffins
Recipe type: Dessert
Serves: 1 dozen
 

Ingredients
  • 2 cups flour
  • 2 eggs
  • 2 tsp. baking powder
  • 1 tsp. vanilla extract
  • 2 tsp. allspice
  • 2 tbsp. packed brown sugar
  • 1 tsp. salt
  • 1 cup cooked and mashed butternut squash
  • ½ cup maple syrup
  • ¼ cup butter, melted
  • ¼ cup canola oil
  • Topping:
  • 4 tsp. butter
  • 1 tsp. cinnamon or allspice
  • ¾ cup brown sugar

Instructions
  1. Mix the dry muffin ingredients in one bowl.
  2. Mix the wet ingredients in a separate bowl until blended.
  3. Preheat the oven to 400F.
  4. Combine the two batches until dry ingredients are moistened.
  5. Fill greased or paper-lined muffin cups ¾ full batter.
  6. In a small bowl, combine “topping” ingredients until crumbly. Sprinkle over batter.
  7. Bake for (up to) 20 minutes, test with toothpick.
  8. Cool for 5 minutes.
  9. Transfer to a wire rack.
  10. Serve warm.
