Spiced Winter Squash Muffins

Ingredients
- 2 cups flour
- 2 eggs
- 2 tsp. baking powder
- 1 tsp. vanilla extract
- 2 tsp. allspice
- 2 tbsp. packed brown sugar
- 1 tsp. salt
- 1 cup cooked and mashed butternut squash
- ½ cup maple syrup
- ¼ cup butter, melted
- ¼ cup canola oil
- Topping:
- 4 tsp. butter
- 1 tsp. cinnamon or allspice
- ¾ cup brown sugar
Instructions
- Mix the dry muffin ingredients in one bowl.
- Mix the wet ingredients in a separate bowl until blended.
- Preheat the oven to 400F.
- Combine the two batches until dry ingredients are moistened.
- Fill greased or paper-lined muffin cups ¾ full batter.
- In a small bowl, combine "topping" ingredients until crumbly. Sprinkle over batter.
- Bake for (up to) 20 minutes, test with toothpick.
- Cool for 5 minutes.
- Transfer to a wire rack.
- Serve warm.
