A creamy Thai peanut sauce for chicken or beef satay!

  • 1 green onion, chopped
  • 1 tsp.sesame oil
  • 2 tbsp. brown sugar
  • ¾ cup dry roasted peanuts
  • 1 tbsp. lite soy sauce
  • 1 cup coconut milk

  1. Combine peanuts, sesame oil, brown sugar, and soy sauce with coconut milk in a food processor.
  2. Blend until smooth.
  3. Mix in the green onions (leaving a tsp. or so aside for garnish).
  4. Pour in to serving dish.
  5. Enjoy hot, cold or room temperature.

If you are planning on heating the dipping sauce, heat in a sauce pan over low heat. Stir constantly. Bring to a desirable temp. and transfer to serving dish.
