Homemade tomato bisque…nice and creamy. How simple can such a delicious soup be? Serves many!


  • 2 28 oz. cans whole tomatoes
  • 4 oz. butter
  • 1 cup flour
  • 1 cup flour
  • 2 cartons chicken broth
  • 1/4 cup heavy cream
  • 1/4 cup basil, sliced thin
  • salt and pepper to taste
  • 1 tsp. sugar (optional)
  • Parmesan cheese and or croutons(optional)


  1. Slice tomatoes and remove seeds. Puree with the juice in a blender.
  2. In a large pot, melt the butter and add flour. Whisk this over medium-high heat for about 5 minutes.
  3. Add chicken broth and bring to a boil, stirring until it thickens.
  4. Add tomato puree, bring just about to a boil, then simmer for about 30 minutes.
  5. Add salt, pepper, and optional sugar (all to taste).
  6. Stir in cream and add basil.
  7. Garnish with cheese and/or croutons!
