Vanilla Bean Ice Cream

  • 2 eggs
  • 1 egg yolk
  • 1 cup sugar
  • ¼ tsp. salt
  • 2½ cups whipping cream
  • 2 cups half-and-half cream
  • 2 tsp. vanilla extract
  • 1 vanilla bean stem

  1. Whisk the eggs and set aside.
  2. Preheat a heavy saucepan over medium heat.
  3. Cook the eggs, sugar, salt, and both types of cream over medium heat.
  4. Stir constantly, until the mixture is thick enough to coat a metal spoon.
  5. Remove from the heat and cool by setting pan in ice and stirring the mixture.
  6. Cover the chilled pan and refrigerate overnight.
  7. Pour custard and vanilla into the cylinder of an ice cream freezer.
  8. Freeze according to the manufacturer’s directions.
