I had an extra package of ground chicken that needed to be used, so I put together a quick and simple chicken meatball recipe!

Chicken Meatballs

Serves: 4

Makes approximately 12 meatballs!
  • 1 1lb. ground chicken
  • 2 tsp. garlic salt
  • 4 garlic cloves, pressed
  • 1 tsp. oregano
  • ½ tsp. rosemary
  • ½ tsp. fennel
  • 3 tbsp. bread crumbs
  • 1 tbsp. olive oil.

  1. Here’s the easy part! Toss all of the ingredients in a bowl, and mix with your fingers.
  2. Preheat the oven to 400F.
  3. Once the meat is mixed well, roll the meat mixture into medium sized meatballs.
  4. Brush the balls with olive oil and arrange them on a glass baking dish.
  5. Bake in the oven for 15 minutes, flip and bake for an addition 15-20 minutes.
  6. Be sure the chicken is cooked through (as all ovens vary in temperature ranges)

This recipe is great on its own as an appetizer or together with your favorite pasta and sauce.
