Maybe it’s your first time making a pot roast or maybe you just feel like trying a new recipe, this pot roast is simple to make and feeds a crowd!

 

How to Make a Pot Roast

Ingredients
  • 4-5 lbs. beef chuck, pork loin, or beef brisket, remove fat
  • 4 cups beef broth
  • 1 cup water
  • ½ cup veggie or olive oil
  • 1 white onion, chopped
  • 2 celery stalks, chopped
  • 10-20 baby carrots
  • 4 cloves garlic, crushed
  • 1 8oz. can diced tomatoes (including liquid)
  • sea salt and ground black pepper, to taste
  • 4-5 Idaho potatoes, cut into cubes
Instructions
  1. Pre-heat oven to 325F.
  2. In a large pan(on stove), heat oil and add the beef to brown on each side. remove and set aside.
  3. Toss in the celery, onion, and garlic and cook for about 5 minutes.
  4. Return the meat to the pan, add the carrots and tomatoes, stock, salt and pepper.
  5. Bring to a boil.
  6. Cover and transfer to the oven.
  7. Cook for a few hours.
  8. At the 3 hour mark, salt and pepper the potatoes and brush with a bit of oil and arrange them around the pot roast.
  9. Cook for 1.5-2 more hours. The interior of the roast should be 175F.
