How to Make a Pot Roast

Ingredients
- 4-5 lbs. beef chuck, pork loin, or beef brisket, remove fat
- 4 cups beef broth
- 1 cup water
- ½ cup veggie or olive oil
- 1 white onion, chopped
- 2 celery stalks, chopped
- 10-20 baby carrots
- 4 cloves garlic, crushed
- 1 8oz. can diced tomatoes (including liquid)
- sea salt and ground black pepper, to taste
- 4-5 Idaho potatoes, cut into cubes
Instructions
- Pre-heat oven to 325F.
- In a large pan(on stove), heat oil and add the beef to brown on each side. remove and set aside.
- Toss in the celery, onion, and garlic and cook for about 5 minutes.
- Return the meat to the pan, add the carrots and tomatoes, stock, salt and pepper.
- Bring to a boil.
- Cover and transfer to the oven.
- Cook for a few hours.
- At the 3 hour mark, salt and pepper the potatoes and brush with a bit of oil and arrange them around the pot roast.
- Cook for 1.5-2 more hours. The interior of the roast should be 175F.
