High fiber, low sodium, vegetarian soup! My dad and his fiance made this for dinner the other night and just loved it!

Thom and Nancy’s lentil soup!
  • 2½ cups cooked lentils
  • 1 cup chopped carrots
  • 1 can chopped tomatoes
  • 3 cloves garlic, pressed
  • 1 tbsp. olive oil
  • 1 cup white onion, chopped
  • 6 cups low sodium veggie broth
  • 1 tsp. dried basil
  • 1 tsp. cumin
  • 8-10 oz bag of chopped kale
  • salt and pepper to taste

  1. Saute the carrots, onions and garlic with the olive oil for 5 minutes on low.
  2. Add the broth, basil, cumin, salt and pepper.
  3. Stir.
  4. Simmer for 15 minutes, add the kale and lentils.
  5. Return to a simmer and cover for 5 more minutes.
  6. Serve.
