High fiber, low sodium, vegetarian soup! My dad and his fiance made this for dinner the other night and just loved it!
Lentil Soup

Thom and Nancy's lentil soup!
Ingredients
- 2½ cups cooked lentils
- 1 cup chopped carrots
- 1 can chopped tomatoes
- 3 cloves garlic, pressed
- 1 tbsp. olive oil
- 1 cup white onion, chopped
- 6 cups low sodium veggie broth
- 1 tsp. dried basil
- 1 tsp. cumin
- 8-10 oz bag of chopped kale
- salt and pepper to taste
Instructions
- Saute the carrots, onions and garlic with the olive oil for 5 minutes on low.
- Add the broth, basil, cumin, salt and pepper.
- Stir.
- Simmer for 15 minutes, add the kale and lentils.
- Return to a simmer and cover for 5 more minutes.
- Serve.
