Turkey Tacos with Cranberry Salsa

Thanksgiving turkey leftovers gone wild! Leftover turkey dinner can’t get a little tired fast! Try this Mexican take on using your leftovers.

Turkey Tacos with cranberry salsa
  • 6 hard taco shells
  • 2 cups turkey meat leftovers, shredded with a fork
  • ½ cup chopped cilantro
  • 2 tbsp. white onion, chopped
  • 1 cup cranberry sauce
  • 2 tbsp. vegetable oil
  • 1 tsp. salt
  • 1 tsp. chili powder
  1. Heat the oil in a medium sized saute pan.
  2. Fry up the turkey meat (the more dark meat the better).
  3. Dash the turkey meat with the chili powder and salt.
  4. Mix the cranberry with cilantro and onion.
  5. Warm the taco shells according to packaging instructions.
  6. Spread the taco shells with a thin layer of the cranberry salsa.
  7. Fill it up with the crispy, carnitas like turkey meat and enjoy!
  8. Garnish with a little extra chopped cilantro if you wish.
Makes 6 tacos.
