Ingredients
- 2 cups of chopped veggies of your choice
- 6 cups of water
- 3 chicken or vegetable bouillon cubes
- 1 can tomato paste
- 1 tsp. salt
- 2 tsp. italian seasoning
- 2 cups fresh spinach
- ¼ cup shredded parmesan cheese
Instructions
- Saute the vegetables (set the spinach to the side until later) in a little olive oil.
- Stir in the salt and seasoning.
- Add the water and tomato paste.
- Stir well.
- Bring to a boil and reduce to a simmer.
- Add the spinach just before serving.
- Top with a sprinkling of parmesan cheese (optional).
