OK PEOPLE! Cooler temps call for big batches of hot soup like this veggie soup made from stuff you have in your fridge!

Serves: 4

  • 2 cups of chopped veggies of your choice
  • 6 cups of water
  • 3 chicken or vegetable bouillon cubes
  • 1 can tomato paste
  • 1 tsp. salt
  • 2 tsp. italian seasoning
  • 2 cups fresh spinach
  • ¼ cup shredded parmesan cheese

  1. Saute the vegetables (set the spinach to the side until later) in a little olive oil.
  2. Stir in the salt and seasoning.
  3. Add the water and tomato paste.
  4. Stir well.
  5. Bring to a boil and reduce to a simmer.
  6. Add the spinach just before serving.
  7. Top with a sprinkling of parmesan cheese (optional).
