Wild Mushroom Soup

My husband HATES mushrooms, so I rarely cook with them. I think this soup could ALMOST convince him to give mushrooms a try.

Serves: 4

  • 4 tbsp. butter
  • 2 – 3 cups of sliced mushrooms (try it with a small trio of wild mushrooms and the rest white mushrooms, chopped)
  • ¼ cup chopped onion of your choice
  • 1 garlic clove, pressed
  • 4 cups chicken broth
  • 2 cups whole milk or cream for a thicker soup
  • 3 tbsp. flour for even thicker soup
  • ½ tsp. dried tarragon
  • dash of thyme
  • salt and pepper to taste

  1. Saute the mushrooms in butter for 2-3 minutes.
  2. Add the onion, and garlic and saute for 2-3 more minutes.
  3. Add the chicken broth and herbs, then bring to a light boil, stirring occasionally.
  4. Mix in the milk or cream and stir well until it boils once more. If you’re making a thicker soup, now’s the time to mix in the flour (gradually while stirring).
  5. Simmer for 10 more minutes or so.
  6. Garnish with fresh chopped parsley, if you have it!
