My husband HATES mushrooms, so I rarely cook with them. I think this soup could ALMOST convince him to give mushrooms a try.
Wild Mushroom Soup

Ingredients
- 4 tbsp. butter
- 2 - 3 cups of sliced mushrooms (try it with a small trio of wild mushrooms and the rest white mushrooms, chopped)
- ¼ cup chopped onion of your choice
- 1 garlic clove, pressed
- 4 cups chicken broth
- 2 cups whole milk or cream for a thicker soup
- 3 tbsp. flour for even thicker soup
- ½ tsp. dried tarragon
- dash of thyme
- salt and pepper to taste
Instructions
- Saute the mushrooms in butter for 2-3 minutes.
- Add the onion, and garlic and saute for 2-3 more minutes.
- Add the chicken broth and herbs, then bring to a light boil, stirring occasionally.
- Mix in the milk or cream and stir well until it boils once more. If you're making a thicker soup, now's the time to mix in the flour (gradually while stirring).
- Simmer for 10 more minutes or so.
- Garnish with fresh chopped parsley, if you have it!
