Not your typical antipasto appetizer! Try this simple vegetarian skewer at your next get together.
- 12 pieces of cooked tortellini or ravioli
- 12 roasted red pepper pieces
- 12 kalamata olives
- 12 short wooden skewers
- 2 tbsp. extra virgin olive oil
- a dash of salt and pepper
- Combine the raviolis with the olive oil, salt and pepper and stir.
- Skewer one olive, red pepper, and one ravioli.
- Serve while the raviolis are still warm, room temperature or even chilled.
