Leftover taco meat recipe!
Ingredients
- 1 cup leftover cooked taco meat
- 2 Idaho potatoes, washed and dried
- 1 cup salsa of your choice
- 2 tbsp. diced onion
- 1 cup shredded cheese of your choice
- sour cream and chopped green onion for garnish, optional
Instructions
- Bake the potatoes in the oven at 375F for 50 minutes.
- Remove from the oven, cut in half lengthwise and mash each potato with a fork.
- Top with the cooked taco meat, salsa, and cheese.
- Return to the oven on a baking sheet and bake uncovered for 10 minutes.
- Remove from the oven, and plate.
- Top with the green onion and a dollop of sour cream, optional.
