Baked potato with a twist! Twice baked potato, smothered in yummy Mexican toppings!

Leftover taco meat recipe!
  • 1 cup leftover cooked taco meat
  • 2 Idaho potatoes, washed and dried
  • 1 cup salsa of your choice
  • 2 tbsp. diced onion
  • 1 cup shredded cheese of your choice
  • sour cream and chopped green onion for garnish, optional

  1. Bake the potatoes in the oven at 375F for 50 minutes.
  2. Remove from the oven, cut in half lengthwise and mash each potato with a fork.
  3. Top with the cooked taco meat, salsa, and cheese.
  4. Return to the oven on a baking sheet and bake uncovered for 10 minutes.
  5. Remove from the oven, and plate.
  6. Top with the green onion and a dollop of sour cream, optional.
