We’re in the midst of a very strict diet of fruits, veggies, nuts and olive oil. After eating soups and salads for the last 4 days, I came up with this recipe for something different with texture!
  • 2 small russet potatoes, washed
  • ¼ green pepper, chopped
  • ¼ onion, chopped
  • 2 tbsp. olive oil
  • salt and pepper

  1. Shred the potatoes.
  2. Combine the potatoes with the onion and pepper.
  3. Salt and pepper the ingredients to your liking.
  4. Compact the ingredients into a ball and flatten.
  5. Fry both sides until deep golden brown on both sides.
  6. We topped with guacamole and salsa.
