OK, this recipe was adapted from the Whole Living Challenge. My husband made it for me this morning/Valentine’s Day.

Turmeric Tofu Scramble

Tofu with so much flavor!
Ingredients
  • 8 oz. firm tofu, water drained and crumbled by hand
  • fresh ginger 1 tsp.
  • 2 tbsp. olive oil
  • ½ turmeric
  • 2-3 cloves garlic
  • 2-3 cups fresh spinach
  • ¼ cup chopped yellow onion
  • finish with sea salt and pepper

Instructions
  1. Heat oil in a medium sized pan over med. low.
  2. Add oil, turmeric, garlic and onion to the saute pan and stir.
  3. Cook for approx. 2 minutes.
  4. Crumble the tofu over the turmeric mixture.
  5. Add the spinach.
  6. Cook until tofu is heated and spinach has wilted.
  7. Finish with a drizzle of olive oil and sprinkling of sea salt and pepper.
