Cauliflower Kale Soup

Garnish this hearty green soup with a drizzling of cream or sour cream. Yum!

Ingredients
  • 2-3 cups chopped cauliflower (frozen or fresh)
  • 1 bunch of kale, de-stemmed
  • ½ cup fresh basil
  • 5 cloves of garlic, shredded
  • ¼ cup oil
  • 5 cups water
  • ½ white or yellow onion
  • 1 tsp. sea salt
  • 1 tsp. pepper
  • 4 tbsp. sour cream or fresh cream

Instructions
  1. Combine all ingredients in a pitcher.
  2. Pour a cup or two at a time into a blender or food processor.
  3. Blend until smooth.
  4. Add to pot on stove. Heat over medium
  5. Bring to a boil.
  6. Reduce to low.
  7. Simmer for 25-30 minutes.
  8. Once you’re ready to serve the soup drizzle with a little cream.
  9. Enjoy!
