Cauliflower Kale Soup

Ingredients
- 2-3 cups chopped cauliflower (frozen or fresh)
- 1 bunch of kale, de-stemmed
- ½ cup fresh basil
- 5 cloves of garlic, shredded
- ¼ cup oil
- 5 cups water
- ½ white or yellow onion
- 1 tsp. sea salt
- 1 tsp. pepper
- 4 tbsp. sour cream or fresh cream
Instructions
- Combine all ingredients in a pitcher.
- Pour a cup or two at a time into a blender or food processor.
- Blend until smooth.
- Add to pot on stove. Heat over medium
- Bring to a boil.
- Reduce to low.
- Simmer for 25-30 minutes.
- Once you're ready to serve the soup drizzle with a little cream.
- Enjoy!
