How to make a simple chicken chow/lo mein dish at home! Better than take-out and lower sodium!

Ingredients
  • 1 bunch bok choy , sliced
  • 1 tbsp. vegetable oil
  • 1 cup bean sprouts
  • ½ cup chopped mushrooms
  • 1 cup chopped broccoli
  • 1 (7 ounce) can sliced water chestnuts, drained
  • 2 boneless skinless chicken breasts
  • 3 tbsp. cornstarch
  • ¼ cup water
  • 1 (10 ounce) can condensed chicken broth (low sodium)
  • ¼ cup lite soy sauce
  • ¼ stir fry sauce
  • 1 1lb. chow mein noodles
Instructions
  1. In a large pot or wok, saute chicken pieces. Set aside.
  2. Saute book choy in oil for a few minutes.
  3. Add bean sprouts, mushrooms, and broccoli.
  4. Cook for 3 minutes.
  5. In a large bowl, blend cornstarch with water.
  6. When smooth, add chicken broth and soy sauce to bowl.
  7. Mix well and pour over meat and vegetables.
  8. Bring to a boil, stirring until sauce thickens.
  9. Reduce heat to low.
  10. Cover and simmer 10 to 15 minutes.
  11. In a separate pot, prepare chow mein noodles.
  12. Mix into wok with a little extra oil and the stir fry sauce.
  13. Serve!
