How to make a simple chicken chow/lo mein dish at home! Better than take-out and lower sodium!

Ingredients
- 1 bunch bok choy , sliced
- 1 tbsp. vegetable oil
- 1 cup bean sprouts
- ½ cup chopped mushrooms
- 1 cup chopped broccoli
- 1 (7 ounce) can sliced water chestnuts, drained
- 2 boneless skinless chicken breasts
- 3 tbsp. cornstarch
- ¼ cup water
- 1 (10 ounce) can condensed chicken broth (low sodium)
- ¼ cup lite soy sauce
- ¼ stir fry sauce
- 1 1lb. chow mein noodles
Instructions
- In a large pot or wok, saute chicken pieces. Set aside.
- Saute book choy in oil for a few minutes.
- Add bean sprouts, mushrooms, and broccoli.
- Cook for 3 minutes.
- In a large bowl, blend cornstarch with water.
- When smooth, add chicken broth and soy sauce to bowl.
- Mix well and pour over meat and vegetables.
- Bring to a boil, stirring until sauce thickens.
- Reduce heat to low.
- Cover and simmer 10 to 15 minutes.
- In a separate pot, prepare chow mein noodles.
- Mix into wok with a little extra oil and the stir fry sauce.
- Serve!
