Balsamic Glazed Whole Tomato over Penne

Had some extra tomatoes lying around, so we whipped this together. Delish!

Glazed Whole Tomatoes Over Penne

Serves: 2-4

  • 4 vine tomatoes (medium-large)
  • ½ cup balsamic vinegar
  • 2 tbsp. olive oil
  • 1 tsp. pepper
  • 1 tsp. dried or fresh parsley
  • 1 garlic clove, shredded
  • Parmesan cheese (plenty for topping)

  1. Wash the tomatoes, and set aside.
  2. Heat a sauce-pan over medium.
  3. Add the olive oil and the balsamic.
  4. Place the tomatoes, spread apart from each other.
  5. Bring to a boil and then reduce to low.
  6. Simmer until the balsamic has reduced and the tomatoes are tender.
  7. Top the tomatoes with fresh cracked pepper.
  8. Prepare the pasta according to packaging.
  9. Pile the pasta on your plate.
  10. Top with a whole tomato and drizzle with the balsamic reduction.
  11. Drizzle with olive oil, cheese, parsley/basil.
