Double Chocolate Fudge Brownies

Ingredients
- ½ cup dark chocolate, chopped
- 7 tbsp. butter
- 3 tbsp. light olive oil
- 3 eggs
- ⅓ cup vanilla sugar
- ⅝ cup plain flour
- 1 tsp. pure vanilla extract
Instructions
- Preheat oven to 355F and line a 8" x 8" cake tin with baking paper.
- Melt butter and 100g of the chocolate in a large bowl the microwave for 1 minute. {or in a large heavy bottom pan over low heat}. Add oil, whisk to blend, and cool slightly if too warm.
- Whisk in the eggs one by one, then the vanilla extract followed by the sugar and flour. Blend well.
- Mix in the remaining dark chocolate and pour brownie mix into prepared pan. Bake for 30 minutes.
- Remove from the oven and allow to cool slightly. If served slightly warm the chocolate bits will ooze out which is rather delicious but they are very good cold too.
